Ingredients:

  • 1 deep dish pie crust, 9-inches
  • 4 cups cooked pumpkin, mashed
  • 2 eggs
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 14 oz. condensed milk, sweetened

Directions:

  1. Preheat oven to 425° F.
  2. Mix milk, eggs and pumpkin together in a large bowl.
  3. Add in nutmeg, ginger, salt and cinnamon and whisk until blended.
  4. Pour mixture into pie crust and spread evenly.
  5. Bake for 15 minutes then reduce heat to 350° F.
  6. Bake another 30-40 minutes or until a knife comes out clean when inserted.
  7. Let cool 10 minutes then serve.
