Special ingredient: Spinach

You might think that the bacon is what makes most sandwich recipes so delicious but in this particular recipe, the spinach is the star. You get tons of vitamins and minerals from spinach like vitamins K, A, C, B3, B2 and B1, not to mention calcium, potassium, fiber and the all-important omega 3 fatty acids. In addition to all these nutrients, spinach provides a spicy flavor that cuts through the richness of the bacon and provolone.
