I think one of the reasons why it is so hard to keep a good healthy diet going is because of the lack of time most of us have to make a healthy meal at home. These chicken dinner recipes will hopefully give you a few ideas for home cooked meals that are easy to prepare and healthy to eat!

I recently wrote a post about how a fruit and vegetable diet is a wonderful way to lose fat. Using that as a basis, what do you think is in most of these chicken dinner recipes?

Chicken Ratatouille
A delicious old fashioned french recipe with a twist-add chicken for a delicious chicken dinner recipe!
2 Cut up Chicken Breasts
2 cups of chopped eggplant and zucchini
1 cup chopped onion and bell pepper
1 can stewed tomatoes
2 tbsp olive oil
1 tbsp minced garlic
1/2 tbsp of italian seasoning
Salt and pepper to taste
Saute the chicken in garlic and olive oil. Add chopped vegetables and saute until eggplant is tender. Sprinkle with seasonings and cook for 1 more minute. Sprinkle with parmesan and serve.
approx 225 per one cup serving.
Grilled Chicken and Portobello Mushrooms
A healthy chicken dinner recipe with dijon mustard and roasted vegetables.
2 chicken breasts cut in half
1 portobello mushroom sliced
1/2 cup of roasted red peppers
1/4 cup of quartered onion
4 Tbsp dijon mustard (calorie free)
Coat chicken breast in dijon mustard and place on a baking sheet. Cook at 400 degrees for 10-15 minutes. Top with sliced vegetables and salt to taste. Broil for 3 minutes. Serve with steamed vegetables.
approx. 200 calories per half chicken breast with 1/4 cup veggies.
I like to keep cooked chicken breasts in the fridge ready to use in stir fries or quick salads but sometimes that gets old. Here is a fresh idea for how to use left over chicken as a healthy chicken dinner recipe on the go.
Zesty Chicken Coleslaw
Switch up the plain lettuce salad for a crunchy delicious chicken dinner recipe that is good for you too!
1 shredded fully cooked chicken breast
1-14 oz bag of prepared coleslaw mix
1/8 c. white vinegar
1/8 c. fat free italian dressing
1 Tbsp italian seasoning
1Tbsp sugar
3 Tbsp sliced almonds
Mix all the ingredients together and enjoy!
approx 180 calories per cup of coleslaw

instead of stuffing that turkey with bread try stuffing that turkey with apple orange with the pill tuck plenty of better under the skin put a light glaze or brown sugar and honey with a touch of lemon on the skin of course for a tangy twist 3 cups of water mixed with your choice of taste i like teriky
