Avocado and Black Bean Salad
The avocado nutrition facts makes this a healthy treat. It is also light and summery, full of fiber, and nutritious.

- 1 (11 ounce) can Mexicorn, drained
- 1 1/3 cups chopped peeled avocado
- 1 cup chopped seeded cucumber
- 1 cup chopped seeded tomatoes
- 1/2 cup thinly sliced green onions
- 1 small jalapeno pepper, seeded and chopped
- 1 teaspoon lime juice
- DRESSING:
- 2 tablespoons cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
In a large bowl, combine the first eight ingredients. In a small bowl, whisk the remaining ingredients into a dressing. Stir into salad. Refrigerate for around an hour before serving. For presentation, scoop 1/4 cup of salad into lettuce cups and serve.
Grilled Steak Pinwheels
A beautiful presentation of beef and vegetables that is filling but not fattening.
- 1 1/2 pounds flank steak, pounded to 1/2 inch thickness
- 1/4 cup mashed sundried tomatoes
- 1 clove garlic, peeled
- 1/4 teaspoon salt
- 1/4 cup chopped onion
- 2 cups fresh baby spinach
- 1/2 cup crumbled feta cheese
- MARINADE
- 1/8 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon italian seasoning
Marinade the flank steak the night before the party. When you have the grill fired up and heating, it’s time to prepare the pinwheels. First layer the spinach and the feta out on the tenderized flank steak. Add the garlic, tomatoes, and onion. Roll the flank steak tightly, keeping the stuffing evenly distributed. Tie the roll with string at both ends and in the middle. When the grill is ready, place it on the grill. Keep rolling it forward every 5-7 minutes by a couple of inches. Cook until no blood is running when you cut into the middle. For presentation, cut the steak roll into 1 inch wheels and serve.
Grilled Fruit
A different way to eat fruit that has a sweet and smoky flavor.
- 2 nectarines, cut into quarters
- 5 strawberries, cut in halves
- 1 banana cut in half lengthwise, and in thirds
- 3 pineapple rings
- 1 apple cut into quarters
- SAUCE
- 2 Tbsp of melted vegetable oil spread
- 1 Tbsp honey
- 3 Tbsp orange juice
- 1 tsp of vanilla extract
Whisk together sauce ingredients and toss with fruit. Place fruit on the grill. Be careful because the different fruits will cook at different speeds. You don’t really want to cook them all the way, just enough to get a good grill flavor.
